Mac and cheese have always been one of my favorite comfort foods, but I never realized how much history it had until I started this project. What began as a simple dish from childhood dinners connects to centuries of change from European cooking to African American creativity and modern comfort culture. In this project, I want to track the journey of mac and cheese across time, showing how a humble mix of pasta and cheese became mac & cheese, culture, and community. I want to learn not just where it came from, but how it became a food that means something personal to me and to so many others.
